Garlicky Sun-Dried Tomato Appetizer2013-06-20
A friend’s recipe that is healthy and full of flavour
- 1 1/2 oz garlic, peeled
- 2 - 3 oz sundried tomatoes, coarsely chopped
- 2 - 14 1/2 oz cans 1/3 less fat chicken broth
- 8 oz feta or goat cheese, crumbled
Heat oven to 375. Combine garlic and tomatoes in a food processor; process until finely chopped.
Spoon into a quiche pan or 10" pie plate. Pour chicken broth over tomato mixture
Bake 50 mins; stir. Sprinkle with cheese. Continue baking until heated through; about 15 minutes. Serve with sliced french baguette.
