Garlicky Sun-Dried Tomato Appetizer

A friend’s recipe that is healthy and full of flavour

Ingredients

  • 1 1/2 oz garlic, peeled
  • 2 - 3 oz sundried tomatoes, coarsely chopped
  • 2 - 14 1/2 oz cans 1/3 less fat chicken broth
  • 8 oz feta or goat cheese, crumbled

Method

Step 1

Heat oven to 375. Combine garlic and tomatoes in a food processor; process until finely chopped.

Step 2

Spoon into a quiche pan or 10" pie plate. Pour chicken broth over tomato mixture

Step 3

Bake 50 mins; stir. Sprinkle with cheese. Continue baking until heated through; about 15 minutes. Serve with sliced french baguette.
