French Croissant Salmon Breakfast Casserole

Casserole only takes a few minutes in the morning if you assemble it the day before. Ham can be substituted for salmon This recipe serves 8
Ingredients
- 8 croissants Croissants, apple
- 8 oz Swiss cheese, grated Cheese, swiss
- 4 oz smoked salmon OR ham, chopped
- 2 Tbs fresh chives, chopped Chives, raw
- 10 large eggs Egg, whole, raw, fresh
- 3 cups milk Milk, reduced fat, fluid, 2% milkfat, with added vitamin A
- pinch nutmeg
- 1/4 tsp salt Salt, table
- 1/4 tsp pepper Spices, pepper, black
Method
Step 1
Butter a 9x13 baking dish and set it aside. Preheat oven to 350. Slice croissants in half as if you were making a sandwich, reserving the top halves. Cube the bottom halves of croissants and place in a large bowl. Mix in the Swiss cheese, smoked salmon and chives. Set aside.
Step 2
In a separate bowl, mix in eggs, milk, nutmeg, salt and pepper. Add the egg mixture to croissants and salmon. Spoon the combined mixture into prepared baking dish. Arrange the reserved croissant halves on top of the casserole. Press them gently into eggs mixture to make sure they get moistened. Bake for 50 mins to 1 hour or until puffed and golden
