Firehouse "Something Different Salad

Ingredients
- 3/4 cup olive oil Oil, olive, salad or cooking
- 1/4 cup white wine vinegar Vinegar, white wine
- 1 large shallot, minced Shallots, raw
- salt and pepper Peppers, sweet, red, cooked, boiled, drained, with salt
- 2 Tbs fresh lemon juice Lemon juice, raw
- 3 avocados, pitted,peeled &cut into 1/4"slices
- 3 medium tomatoes, sliced 1/4"thick Tomatoes, red, ripe, raw, year round average
- 1/2 small red onion, thinly sliced Onions, red
- 1/2 cup fresh basil, thinly sliced Spices, basil, ground
- 4 oz feta cheese, crumbled Cheese, feta
- 12 oz mixed salad greens Lettuce, mixed greens, raw
Method
Step 1
Slowly drizzle olive oil and vinegar; whisking together to emulsify. Add shallot and seasonings.
Step 2
Toss avocados in lemon juice.
Step 3
Layer ingredients ending with the cheese in order in a large non-reactive dish. Pour vinaigrette over the layers; cover and chill 2-3 hours or overnight. If marinating over night add the Basil just before serving
Step 4
Serve the marinated vegetables and vinaigrette by spooning over mixed salad greens. Serve immediately
