Eggnog Pancakes


Absolutely a winner. Made these for Boxing Day brunch and we could not keep up with the demand.  This recipe serves 6


  • 2 cups pancake mix (Original not Just add water type)
  • 1 large egg Egg, whole, raw, fresh
  • 1 1/2 cups commercial eggnog ( I found I had to add 1/2 c of milk because it was too thick)
  • 1 1/2 tsp vanilla Vanilla extract
  • pinch nutmeg


Step 1

Place pancake mix in a bowl. In another bowl, whisk egg, eggnog,vanilla and nutmeg: stir into pancake mix just until moistened. Pour batter by 1/3 cupfuls onto a lightly greased hot griddle; turn when bubbles form on the top of the pancakes. Cook until second side is golden brown. WATCH THE TEMPERATURE ON THE GRIDDLE AS THE SUGAR CONTENT CAUSES THEM TO BROWN QUICKLY AND THEY ARE NOT COOKED THROUGH.

Step 2

Serve with choice of sauces
