Curried Spinach Salad


 This recipe serves 12


  • 2 lbs fresh spinach, Stems removed and torn into bitesize pieces
  • 2/3 cup dry roasted peanuts, or cashews
  • 1/2 cup raisins, soaked for ten minutes
  • 1/2 cup green onions, sliced thinly Onions, green, spring or scallions (includes tops and bulb), raw
  • 2 Tbs sesame seeds, toasted Seeds, sesame seeds, whole, dried
  • 3 apples , red delicious and green granny smith, chopped
  • 1/2 cup white wine vinegar Vinegar, white wine
  • 2/3 cup salad oil Oil, olive, salad or cooking
  • 1 Tbs chutney Mango chutney
  • 1 tsp curry powder Spices, curry powder
  • 1 tsp salt Salt, table
  • 1 tsp pepper Spices, pepper, black
  • few drops Tabasco sauce Sauce, ready-to-serve, pepper, TABASCO


Step 1

Dressing: Place all ingredients in a small jar and shake well. I do this a day ahead to let the flavours blend

Step 2

Salad: Chopped apples just before serving and add to the other ingredients except the sesame seeds. Toss and add dressing.

Step 3

Serve on plates sprinkling sesame seeds on top of each salad or if serving on a buffet table toss salad and top with the sesame seeds
