Crockpot Mashed Potatoes

A simple twist on a classic recipe  This recipe serves

Ingredients

  • 5 lbs red potatoes, cut into chunks Potatoes, red, raw
  • 1 Tbs mince garlic
  • 2 cubes chicken bouillon Soup, chicken broth or bouillon, dehydrated, dry
  • 8 oz container sour cream Cream, sour, cultured
  • 8 oz package of cream cheese, softened Cheese, cream
  • 1/2 cup butter Butter, without salt
  • salt and pepper for taste Peppers, sweet, red, cooked, boiled, drained, with salt

Method

Step 1

Bring a large put of salted water to a boil. Add potatoes, garlic and chicken bouillon cubes. Cook potatoes until tender but still firm, about 15 minutes. Drain, reserving a little of the cooking water. Mash potatoes with sour cream and cream cheese, adding reserved water to reach desired consistency. Transfer to a 4 quart crockpot, cover, and cook on low for 2 to 3 hours. Just before serving, stir in butter and season with salt and pepper to taste.
