Coffee Butter Cookies


Wonderful served with Iced Coffee  This recipe serves


  • 1 cup sifted flour Wheat flour, white, all-purpose, enriched, unbleached
  • 1/2 cup sifted icing sugar
  • 1/2 cup cornstarch Cornstarch
  • 1 tbsp concentrated soluble coffee
  • 1/8 tsp salt Salt, table
  • 1 cup butter Butter, without salt
  • 1/4 tsp vanilla extract Vanilla extract


Step 1

Sift together the dry ingredients in a bowl and set aside. Cream the butter and vanilla until butter is softened. Mixing until well blended after each addition, add dry ingredients in fourths to the creamed mixture. Chill in refrigerator about 1 hour. Set out the cookie sheets. Shape dough into 1 in diameter balls. Place on the cookie sheets about 2' apart. With a lightly floured fork, slightly flatten cookies, forming a crisscross pattern. Bake at 300F for 20-25 mins. WATCH CLOSELY!!! Set cookie sheets on cooling racks for about 10 mins. Carefully remove cookies to rack to cool.
