Christmas Turkey


This came from a lady in Egypt. It creates delicious and moist turkey.  This recipe serves


  • 1 2.5 kilo turkey or a little bigger
  • 4-5 large oranges
  • 4 sour apples
  • 3½ tbsp olive oil Oil, olive, salad or cooking
  • 2 tbsp Dijon mustard Mustard, Dijon
  • 2 tbsp sweet or Russian mustard
  • pepper and salt Peppers, sweet, red, cooked, boiled, drained, with salt
  • 3 tbsp honey ( the thick pouring kind)
  • 1 cup orange juice Orange juice, raw
  • 1 shot glass Kirsch ( I used Cherry Herring)
  • 1 small shot Cognac


Step 1

Rub the empty cavity of the turkey with salt and pepper then fill it with pieces of orange and apple.. Close the the turkey by sewing it at the neck and the bottom. Mix oil with half of each mustard, pepper and salt and coat the turkey with this mixture. Roll the turkey in double aluminium foil and put it in a moderate hot oven. For each Kilo (2.2lb) you have to count a little less than an hour in the oven. One hour before serving you can open the foil and coat the turkey with the following. mixture: 2 tbsp. honey, 2 tbsp Dijon Mustard , 1 cup orange juice, and Kirsch. Put it back in the oven, foil open. At serving time decorate dish with orange slices and at the table you can flambee with cognac
