Ingredients
- 1 package fresh spinach, torn into bite size pieces
- 3 1/2 cups rice, cooked Rice, white, long-grain, regular, cooked
- 1/2 lb mushrooms, sliced Mushrooms, raw
- 1/2 cup raisins Raisins, seedless
- 1 lb bean sprouts Bean sprouts, mung beans, mature seeds, cooked, boiled, drained, with salt
- 1/2 cup shallots, chopped Shallots, raw
- 3 stalks celery, thinly sliced Celery, raw
- 1 cup cashews, pieces
- 1/2 cup vegetable oil Vegetable oil, canola
- 1/2 cup soy sauce Soy sauce made from soy and wheat (shoyu), low sodium
- 2 cloves garlic, crushed Garlic, raw
- 1/4 tsp ginger, minced Ginger root, raw

Step 1
Mix ingredients for dressing and the salad separately. Toss together at the last minute. Serve
