Ingredients
- 1 lb chicken breast-- skinned and cut into bite size pieces.
- 1 tbsp cornstarch Cornstarch
- 1 egg white Egg, white, raw, fresh
- few drops oil Oil, olive, salad or cooking
- dash water Water, municipal
- oil -- for deep frying
- 1 tbsp soy sauce Soy sauce made from soy and wheat (shoyu), low sodium
- 1 tsp brown bean sauce
- 1 tbsp sherry Alcoholic beverage, sherry
- 1 tsp sugar Sugars, granulated
- 12-16 cashews--whole
- 1 tbsp oil Oil, olive, salad or cooking
Method
Step 1
Prepare chicken. Mix next 4 ingredients together in a bowl. Add chicken, marinate. Pour oil into a warm pan, let oil warm for 2 mins. Drop chicken, a piece at a time and cook 2-3 mins. Take chicken out and drain well. Mix next 4 ingredients together in a small bowl. Have ready for use. Using another warmed frying pan; add oil and the mixed ingredients. Add chicken and nuts. Fry for about 2 mins, stirring constantly. Serve immediately
