Chicken /Turkey Salad –Three meals a Day

This is a good basic recipe for an Entree and use up Christmas leftovers This recipe serves 12
Ingredients
- 4 cups diced cooked chicken or turkey, 4-5 lb. fowl
- 3 cups diced celery Celery, raw
- 1/2 cup diced green pepper Peppers, sweet, green, raw
- 1/2 cup shredded blanched almonds, browned
- mayonnaise or salad dressing
- salt and pepper to taste Peppers, sweet, red, cooked, boiled, drained, with salt
Method
Step 1
Dice the chicken into 1/2 " cubes. (Too small cubes make a mushy salad)
Step 2
Add other ingredients with enough mayonnaise to blend nicely. Chill well in refrigerator
Step 3
Serve in lettuce cups and garnish with black olives and coarsely grated carrot.
