Chicken in Lemon Marinade


The recipe calls for broiling but I have also used the BBQ  This recipe serves 6


  • 2/3 cup vegetable oil Vegetable oil, canola
  • 1/2 cup lemon juice Lemon juice, raw
  • 1 tbsp Worcestershire sauce Sauce, Worcestershire
  • 1/8 tsp hot sauce Sauce, ready-to-serve, pepper or hot
  • 1 small onion, grated Onions, raw
  • 1 tsp salt Salt, table
  • 1 tsp pepper Spices, pepper, black
  • 1 tsp celery salt Spices, celery salt
  • 6 chicken breasts halves, boned and skinned Chicken, broilers or fryers, breast, meat only, raw


Step 1

Process first 8 ingredients in a blender until smooth, stopping to scrape down sides. Reserve ¼ cup lemon mixture, and chill. Place chicken in a shallow dish or zip- lock bag; pour remaining lemon mixture over chicken. Cover or seal and chill 2 hours, turning chicken occasionally. Remove chicken from marinade, discarding marinade; place chicken on a lightly greased rack in a broiler pan. Broil 7 inches from heat, 11-12 minutes on each side or until tender,;basting chicken frequently with reserved 1/4 cup lemon mixture.
