Chicken Dijon

Tasty and low in fat  This recipe serves 6

Ingredients

  • 6 chicken breasts, boned and skinless Chicken, broilers or fryers, breast, meat only, raw
  • salt and pepper Peppers, sweet, red, cooked, boiled, drained, with salt
  • 1/4 cup dijon mustard Mustard, Dijon
  • 1/3 cup plain yogurt ( can use lowfat but not no fat)
  • 3/4 cup fine fresh bread crumbs Bread crumbs, dry, grated, plain
  • 2 tsp thyme Spices, thyme, ground
  • pam or oil Oil, PAM cooking spray, original

Method

Step 1

Sprinkle chicken with salt and pepper. Mix mustard and yogurt in bowl. In another bowl the crumbs, thyme and S&P. Spread mustard mix over each side of each breast. Dredge in crumbs.

Step 2

On lightly greased baking sheet. Place chicken on sheet and bake 30-35 mins at 350F
