Chicken-Cheese Puffs

Ingredients
- 2 cups cooked chicken, finely diced
- 1 cup mayonnaise
- 2 large shallots, minced
- 1/4 tsp dried thyme, crumbled
- 1/4 tsp dried basil, crumbled
- salt and pepper
- 1/2 cup grated parmesan cheese
- 1/2 cup Fontina cheese, Gruyere or swiss cheese (or up to 3/4)
- rye bread, thinly sliced
Method
Step 1
Preheat oven to 350F. Combine first 3 ingredients in medium bowl. Blend in herbs and seasonings. Add fontina, swiss or gruyere cheese and 2 tablespoons of grated parmesan; blending well. Slice bread in half and spread mixture evenly over tops.
Step 2
Arrange on baking sheet, sprinkle with remaining parmesan cheese and bake until lightly browned, about 10 minutes
