Chicken Breasts in Phyllo Pastry


Special little packages which taste and look great.  This recipe serves 8


  • 1 cup mayonnaise Salad dressing, mayonnaise type, regular, with salt
  • 2/3 cup green onions, chopped first
  • 3 1/2 Tbs fresh lemon juice Lemon juice, raw
  • 1 smalll garlic, minced
  • 3/4 tsp dried tarragon Spices, tarragon, ground
  • 8 chicken breasts, skinned and boned Chicken, broilers or fryers, breast, meat only, raw
  • salt and pepper Peppers, sweet, red, cooked, boiled, drained, with salt
  • 16 sheets frozen phyllo dough, thawed Phyllo dough
  • butter flavoured cooking spray
  • 3 1/2 Tbs parmesan cheese Cheese, parmesan, grated


Step 1

combine first 5 ingredients. Salt and pepper chicken. Place one sheet of phyllo dough on sheet of plastic wrap. Spray evenly with cooking spray, then top with another sheet of phyllo and spray. spread about 3 tbsp mayo mix on all sides of chicken breasts. Place diagonally on one corner. Fold corner over chicken then the sides and roll up. Place seam down on a cookie sheet with edges. Repeat with rest of breasts. Spray bundles and sprinkle with cheese Bake at 350F 40-45 mins.
