Chicken ala King —Three Meals a Day


Although there are many versions of this recipe; this is a good basic one to start with. It was Bill’s saving on nights when I was late home from work. Maybe too much for the boys.  This recipe serves


  • 5 tbsp butter Butter, without salt
  • 2 tbsp chopped green peppers Peppers, sweet, green, raw
  • 1/2 cup sliced mushrooms Mushrooms, raw
  • 4 tbsp flour Wheat flour, white, all-purpose, enriched, unbleached
  • 3/4 tsp salt Salt, table
  • 1/4 tsp pepper Spices, pepper, black
  • dash cayenne pepper
  • 2 cups whole milk or 1/2 cup chicken stock and 1 1/2 cups milk
  • 2½ cups diced cooked chicken/turkey
  • ¼ cup diced pimento Pimento, canned
  • Optional chopped toasted almonds and diced celery for crispness


Step 1

Simmer butter, mushrooms and green pepper (and celery if using) for a few minutes. Blend in the flour and seasoning. Add the milk and cook until thick. Now add chicken and pimento on boiled rice, on toast or in patty shells. Sprinkle with almonds if using.
