Cherry Tomatoes Stuffed With Avocado

Ingredients

  • 1 pint large cherry tomatoes
  • 2 medium ripe avocados
  • 2 Tbs sour cream
  • 2 Tbs minced parsley
  • 4 tsp lime juice
  • 2 tsp lemon juice
  • 2 tsp minced chives
  • 1/2 tsp salt
  • 1/4 tsp hot pepper sauce
  • 1/4 tsp sugar

Method

Step 1

Cut thin slices form the tops of tomatoes; about 30, and with a small melon ball cutter scoop out and discard the seeds and pulp. Sprinkle the insides lightly with sugar and salt and invert the shells on paper towels to drain for at least 30 mins.

Step 2

In a bowl mash the avocados with the sour cream and minced parsley. add lime juice, lemon juice, minced chives,salt and pepper and remaining ingredients and mash together

Step 3

Fill the shells with the avocado mixture with a small knife
