Cheese Souffle -Three Meals A Day

This is almost fooproof This recipe serves 4
Ingredients
- 3 Tbs butter Butter, without salt
- 4 Tbs flour Wheat flour, white, all-purpose, enriched, unbleached
- 1/2 tsp salt Salt, table
- 1 cup milk Milk, reduced fat, fluid, 2% milkfat, with added vitamin A
- 3/4 cup sharp cheddar cheese, grated Sauce, NESTLE, CHEF-MATE Sharp Cheddar Cheese Sauce, ready-to-serve
- 1/8 tsp dry mustard Spices, mustard dry
- dash cayenne
- 3 large egg yolk Egg, yolk, raw, fresh
- 3 large egg white, stiffly beaten
Method
Step 1
Make a regular cream sauce out of the butter, flour,salt milk and seasoning. Add cheese and stir until melted. Remove from heat; stir in unbeaten egg yolks.
Step 2
Fold in the stiffly beaten egg whites. Pour into a well buttered baking dish. Bake in a moderate oven 350 for 40 mins or until a genlte inserted knife tip, into the centre comes out clean. Serve at once
Step 3
Variation: Use tomato juice in place of milk in the above recipe
