Cheddar Cheese And Pistachio Spread2013-06-20
- 3 cups grated cheddar cheese
- 3/4 stick butter, softened
- 1/4 cup brandy
- 1/2 tsp cayenne
- 3/4 cup pistachio nuts, blanched and oven dried and chopped
In a food processor fitted with steel blade or in a blender in batches, blend cheddar cheese, butter, brandy, and cayenne. Transfer to a bowl and fold in 2/3c of the pistachio nuts. Transfer the spread to crocks. Top crocks with remaining nuts. Serve the spread with crackers.
