Carrot Fritters

I can never make enough of these tasty bites

Ingredients

  • 1 cup flour
  • 1 Tbs chives, snipped
  • 2 tsp baking powder
  • 1/2 tsp thyme
  • 1/2 tsp parsley
  • 1/2 tsp salt
  • 3/4 cup water
  • 3 cups grated carrots
  • oil for deep frying

Method

Step 1

In a small bowl combine flour, chives, baking powder, thyme, parsley, and salt. Add 3/4 cup of water in stream, beating mixture until well combined. Add 3 cups of grated carrots, combining well and let stand for at least 2 hours.

Step 2

Form batter into 1-inch balls and deep fry in 375F, six to eight at a time, turning as necessary, for 3 minutes. Transfer to a paper towel, sprinkle with salt.
