Carrot and Herb Salad

Ingredients
- 1 butter lettuce Lettuce, butterhead (includes boston and bibb types), raw
- 1 carrot Carrots, raw
- 1 red onion, thinly sliced Onions, red
- 1 avocado, sliced Avocados, raw, California
- 1/2 cup pecans Nuts, pecans
- 1 cup fresh italian parsley, coarsely chopped
- DRESSING
- 1/4 cup red wine vinegar Vinegar, red wine
- 1/2 cup olive oil Oil, olive, salad or cooking
- 1 tsp grated orange rind Orange juice, raw
- 2 Tbs orange juice Orange juice, raw
- 2 egg yolk Egg, yolk, raw, fresh
- 1 tsp fresh parsley, chopped Parsley, raw
- 1 tsp fresh chives, chopped Chives, raw
- 1 tsp fresh basil, chopped Spices, basil, ground
Method
Step 1
inTear lettuce into pieces, arrange on plate or plates. Cut carrots into thin sticks, arrange on lettuce with remaing ingredients. Pour dressing over salad just before serving.
Step 2
Dressing: Combine vinegar,oil,rind and juice in jug. Blend or process egg yolk and herbs until smooth. With motor running, gradually pour in vinegar mixture in a thin stream, blend until smooth and slightly thickened
