Buttermilk Pancakes

This has proven to be a favourite because it lighter that most recipes.  This recipe serves

Ingredients

  • 1½ cups (375 ml) all purpose Flour tortillas
  • 3 tbsp (50 ml) granulated sugar
  • 1 tsp(5ml) each baking powder and baking soda
  • ¼ tsp (1ml) salt
  • 1 ¾ cups (425 ml) buttermilk
  • 1 large egg Egg, whole, raw, fresh
  • 2 tbsp 25ml butter melted
  • 2 tsp (10 ml) vanilla
  • 1 tbsp (15 ml) canola oil

Method

Step 1

In a bowl, whisk together dry ingredients. In another bowl mix the remaining ingredients well except the canola oil. Just before cooking pour the wet ingredients over the dry and combined. It will be slightly lumpy. Lightly brush large non stick skillet or griddle with some oil; Heat over medium- high heat. Using scant ¼ cup per pancake; ladle mixture onto griddle, spreading slightly to form pancakes. Cook until small bubble appear on the top(about 3 minutes). Turn over and brown for about 1 minute. Transfer to baking sheet; cover and keep warm in 250F oven.
