Blue Cheese-Walnut Wafers

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 tsp cracked black pepper
  • 8 oz blue cheese
  • 3/4 cup butter
  • 1 cup chopped walnuts
  • 2 egg yolks, slightly beaten

Method

Step 1

In a medium bowl, stir together flour and pepper. Using a pastry blender, cut in blue cheese and butter until mixture resembles coarse crumbs. Add the walnuts and egg yolks to the flour mixture. Using a fork, stir until combined. Form dough into a ball. Turn out onto a lightly floured surface. Knead the dough by gently pressing for 10 to 12 strokes or until it is nearly smooth.

Step 2

Divide the dough in half. Roll out lightly pat each half into a 9-inch log. Wrap logs in plastic wrap. Refrigerate for at least 2 hours and up to 24 hours.

Step 3

Preheat oven to 425F. Cut each log into 1/4 inch slices. Place slices about 1 inch apart on ungreased large baking sheets. Bake for 8-10 minutes or until bottoms and edges are golden. Transfer to wire racks. Serve warm or at room temperature.

Step 4

Can be made ahead and placed in covered container and stored for up to one week in refrigerator.

I serve them this way surrounding a glass filled with Rosemary Twists (from LCBO Food and Drink) or use Cheese Straws
