Beef Croutes With Mustard Mayonnaise

Ingredients
- 500 gram piece beef fillet steak
- 2 Tbs oil
- 2 small french bread sticks
- 20 g butter
- 1 Tbs oil, extra
- fresh tarragon
- MUSTARD MAYONNAISE
- 1/2 cup mayonnaise
- 3 tsp seeded mustard
- 1 Tbs fresh tarragon, chopped
Method
Step 1
Secure beef with string at 3 cm intervals. Heat oil in baking dish; add beef, cook until well browned all over. Bake in dish in hot oven for about 15 minutes or until the beef is done as desired. Cool
Step 2
Cut bread into 1 cm slices, brush with combined butter and extra oil, place on oven tray. Bake in moderate oven for about 5 minutes or until lightly browned and crisp. Cool.
Step 3
Cut beef into thin slices.
Step 4
MUSTARD MAYONNAISE:
Step 5
Combine all ingredients in bowl
Step 6
Just before serving top bread with beef, mayonnaise and tarragon
