Basil Watermelon Sorbet


 This recipe serves


  • 1 cup water Water, municipal
  • 1 cup sugar Sugars, granulated
  • 3 cups pureed watermelon Watermelon, raw
  • 1 tbsp lemon juice Lemon juice, raw
  • 1 large egg white Egg, white, raw, fresh
  • 1½ tbsp finely chopped freshly Basil Spices, basil, ground


Step 1

Combine sugar and water in medium sauce pan. Stir over heat, without boiling until the sugar has dissolved;; bring to a boil , reduce heat and simmer uncovered without stirring for 5 minutes; cool. Combine sugar syrup, puree and juice in a large bowl. Pour mixture into 2 - 12X8x1½" pans, cover with foil; freeze for several hours or until firm. Place mixture into large bowl of electric mixer or food processor with egg white, beat until creamy, stir in basil. Return mixture to pans, cover, freeze for several hours or overnight.
