Basic Crepe Batter


Quantity terms like 11/2 cup of crepe batter refer to batter made with 11/2 cups milk with other ingredients in proportion as given above  This recipe serves


  • 11/2` cups milk Milk, reduced fat, fluid, 2% milkfat, with added vitamin A
  • 1 cup flour Wheat flour, white, all-purpose, enriched, unbleached
  • pinch of salt Salt, table
  • 1 tablespoon melted butter or oil Butter, without salt


Step 1

Sift the flour with the salt into a bowl, make a well in the center and add the egg and egg yoke.

Step 2

Pour in the milk slowly, stirring constantly and, when half is added, stir in the melted butter or oil.

Step 3

Beat well until smooth

Step 4

Add the remaining milk, cover and let stand at room temperature for at least 30 minutes before using.

Step 5

The batter should be the constituency of light cream-- if it is too thick add a little more milk.
