Asparagus with Jalapeno Hollandaise Sauce


A jazzed up version which is great  This recipe serves 6


  • 1 1/2 lbs fresh asparagus Asparagus, raw
  • 1/4 cup butter/margarine Butter, without salt
  • 1 package hollandaise sauce mix
  • 1 1/4 cups milk Milk, reduced fat, fluid, 2% milkfat, with added vitamin A
  • 2 Tbs grated pamesan cheese
  • 3 Tbs lemon juice Lemon juice, raw
  • 1 Tbs jalapeno pepper, seeded,finely chopped Peppers, jalapeno, raw
  • 2 tsp diced pimento Pimento, canned


Step 1

Snap off tough ends of asparagus. Remove scales with a peeler if desired. Place asparagus in steamer basket over boiling water. Cover and steam 8-10 mins or til tender. Keep warm.

Step 2

Melt butter in medium saucepan over medium heat; remove from heat and add sauce mix; stirring until smooth. Return To heat and gradually add milk, stirring constantly, until thickened and bubbly. Stir in cheese and remaining ingredients. Serve over asparagus
