Asparagus or (mixed greens)with Soy-Lemon Dressing


 This recipe serves 4


  • 1/4 lbs thin asparagus, cut diagonally1 1/2"
  • 8 green onion, cut diagonally1 1/2"
  • 1 head romaine lettuce, cut crosswise 1/2" Lettuce, cos or romaine, raw
  • 1/4 cup cashews, chopped
  • 3 green onion, minced Onions, green, spring or scallions (includes tops and bulb), raw
  • 1/8 tsp pepper Spices, pepper, black
  • lemon juice, to taste Lemon juice, raw
  • salt, to taste Salt, table
  • 1 1/2 Tbs oil Oil, olive, salad or cooking
  • 1/4 Tbs fresh ginger, minced Ginger root, raw
  • 2 green onion Onions, green, spring or scallions (includes tops and bulb), raw
  • 1/2 cup chicken stock Soup, chicken broth, canned, prepared with equal volume water, commercial
  • 1 Tbs cider vinegar Vinegar, cider
  • 1 tsp Soy Sauce Soy sauce made from soy and wheat (shoyu), low sodium
  • 1/2 tsp sugar Sugars, granulated


Step 1

Dressing : Heat oil over medium heat. Add ginger & stir until beginning to colour. Blend in green onions& cook 3-4 seconds Mix in stock, 1tbsp vinegar,soy sauce & sugar. Set aside Cook vegetables except lettuce til tender crisp. Chill quickly in ice water, drain & dry on paper towels.Just before serving, mince remaining 3 onions. Transfer to large bowl. Add all remaining vegetables. Bring dressing to boil over medium heat. Boil 30 sec. Stir in 1/8tsp pepper. Taste & add salt,lemon juice to taste as well as the remaining vinegar.Toss salad with simmering dressing and serve at once
