Arugula Salad with Watermelon & Feta

A wonderful chilled summer salad with a Greek style This recipe serves 6
Ingredients
- For the salad:
- 1/2 pound Arugula leaves, washed and patted dry
- 4 cups Diced seedless red watermelon (1/2 of an 8-pound watermelon)
- 1/2 cup Imported feta cheese drained and crumbled
- 1/4 cup Slivered red onion Onions, red
- For the vinaigrette:
- 8 tablespoons Champagne vinegar
- 3 tablespoons Vegetable oil Vegetable oil, canola
- 3 tablespoons Extra-virgin olive oil Oil, olive, salad or cooking
- 1 1/2 teaspoons Dijon mustard Mustard, Dijon
- 1 teaspoon Finely minced shallots Shallots, raw
- Kosher salt and freshly ground black pepper
Method
Step 1
In a large serving bowl, combine the arugula, diced watermelon, crumbled feta and slivered red onion.
Step 2
Make the vinaigrette: In a medium covered container, combine all the ingredients. Shake well and pour over the arugula salad. Toss and season to taste with salt and pepper. Serve.
