Arugula Salad with Watermelon & Feta


A wonderful chilled summer salad with a Greek style  This recipe serves 6


  • For the salad:
  • 1/2 pound Arugula leaves, washed and patted dry
  • 4 cups Diced seedless red watermelon (1/2 of an 8-pound watermelon)
  • 1/2 cup Imported feta cheese drained and crumbled
  • 1/4 cup Slivered red onion Onions, red
  • For the vinaigrette:
  • 8 tablespoons Champagne vinegar
  • 3 tablespoons Vegetable oil Vegetable oil, canola
  • 3 tablespoons Extra-virgin olive oil Oil, olive, salad or cooking
  • 1 1/2 teaspoons Dijon mustard Mustard, Dijon
  • 1 teaspoon Finely minced shallots Shallots, raw
  • Kosher salt and freshly ground black pepper


Step 1

In a large serving bowl, combine the arugula, diced watermelon, crumbled feta and slivered red onion.

Step 2

Make the vinaigrette: In a medium covered container, combine all the ingredients. Shake well and pour over the arugula salad. Toss and season to taste with salt and pepper. Serve.
