Artichoke Muffin Bites

Ingredients

  • 1 14 oz package miniture english muffins, split
  • 1 6 oz jar marinated artichoke heart, drained
  • 1/2 cup roasted sweet red peppers or pimiento slices
  • 1 cup finely shredded mozzarella cheese (4 oz)
  • 1/4 cup parmesan cheese

Method

Step 1

Place muffins split side up on an ungreased baking sheet. Broil 3 inches from heat for 2 to 3 minutes or till muffins are toasted.

Step 2

Cut artichokes into strips, if necessary, to make 24 pieces. Place an artichoke piece on each muffin half; top with red pepper, mozzarella cheese and Parmesan cheese.

Step 3

Broil 2 to 3 minutes more or till cheese melts

Step 4

If desired, garnish serving plate with fresh herb leaves
