Taco Stuffed Zucchini Boats

As all of my close friends know, I am a huge fan of The Bachelor franchise. Recently, The Bachelorette has been keeping me entertained. The finale is a big night for me and I made dinner for my friends last night to close the best thing that network TV has to offer us over the summer. Since I spent the past weekend in Central California wine country, I was looking for something light tonight. I turned to the website SkinnyTaste which my sister has been making recipes from for a while. With the end of summer is nearing, I figured I would take advantage of the produce that it has to offer and went for a recipe that was zucchini heavy. The Taco Stuffed Zucchini Boats were posted recently, so I decided to try these out.

They were a HUGE hit with my girlfriends who came over to watch the show with me last night. The zucchinis didn’t even have a strong zucchini taste because the flavors of the filling bake into them and really take over. I imagine that you could use many different types of ground meats in this but I went with her idea of ground turkey. The amount of spices that are used is really what makes it, so I wouldn’t skip on any of them. I highly recommend these if you’re looking for a light main dish that will use all those zucchinis you see around at the end of the summer.
