Zucchini Soup

Ingredients
- 6 cups sliced zucchini Squash, summer, zucchini, includes skin, raw
- 1 large onion, diced Onions, raw
- 8 oz cream cheese, diced Cheese, cream
- 2 cups chicken broth Soup, chicken broth, canned, prepared with equal volume water, commercial
- 1 tsp salt Salt, table
- 1 tsp pepper Spices, pepper, black
- 1 Tbs dillweed, to taste Spices, dill weed, dried
Method
Step 1
Cook zucchini, onion,broth, dill, salt, and pepper until zucchini is tender
Step 2
Process 1.4 or less at a time in food processor/blender until smooth. Slowly add chunks of cream cheese.to mixture and blend til smooth each time.Adjust seasoning
Step 3
Make the day ahead and reheat to serve being careful NOT to boil
Step 4
Garnish with snipped dill
Step 5
to taste
