Zucchini Gratin

Ingredients

  • 6 tbsp ( 3/4 stick) unsalted butter, plus extra for topping
  • 1 lb yellow onions, cut in 1/2 and sliced (3 large) Onions, yellow, sauteed
  • 2 lbs zucchini, sliced 1/4" thick, 4 zucchini Squash, summer, zucchini, includes skin, raw
  • 2 tsp kosher salt Salt, kosher
  • 1 tsp fresh ground pepper Spices, pepper, black
  • 1/4 tsp ground nutmeg Spices, nutmeg, ground
  • 2 Tbs all purpose flour Wheat flour, white, all-purpose, enriched, unbleached
  • 1 cup hot milk Milk, reduced fat, fluid, 2% milkfat, with added vitamin A
  • 3/4 cup fresh bread crumbs Bread crumbs, dry, grated, plain
  • 3/4 cup grated gruyere Cheese, gruyere
  • 3/4 cup plain feta cheese

Method

Step 1

Combine the bread crumbs and Gruyere and sprinkle on top of the zucchini mixture. Dot with 1 tbsp of butter cut into small bits and bake for 20 minutes or until bubbly and brownedCombine the bread crumbs and Gruyere and sprinkle on top of the zucchini mixture.
