Wine and Cheese Sauce for galette or other seafood dishes


This is a wonderful sauce. I use it often with chicken, fish or seafood . Also good with vegetables.  This recipe serves


  • 1/3 cup white dry Vermouth
  • 2 tbsp cornstarch blended in a small bowl with 2 Tbsp. milk
  • 1½ cups heavy cream Cream, fluid, heavy whipping
  • ¼ tsp salt Salt, table
  • pepper Spices, pepper, black
  • ½ cup grated Swiss cheese Cheese, swiss


Step 1

Add vermouth to a skillet and boil rapidly until one tablespoon is left Remove from heat and stir in cream, cornstarch mixture and seasonings. Simmer two minutes, stirring constantly, then blend in the cheese and simmer one minute more. Correct the seasoning
