Vegetable Lasagne


 This recipe serves 5


  • 1 medium zucchini, chopped in blender
  • 1 cup broccoli, chopped in blender
  • 1 large carrot, chopped in blender
  • 2 large onions, chopped in blender
  • 4 mushrooms, chopped in blender
  • 1 cup spinach leaves, chopped in blender
  • 8 oz skim milk cottage cheese
  • 4 oz skim milk mozzarella cheese, shredded Cheese, mozzarella, part skim milk
  • 1 package instant chicken broth Soup, chicken broth, canned, prepared with equal volume water, commercial
  • 1 tsp oil Oil, olive, salad or cooking
  • 8 lasagna noodles
  • 2 tsp each of thyme, basil, oregano, garlic, parsely, and Mrs Dash pepper and salt


Step 1

Chop all vegetables well and then cook until tender with the herbs. Cool

Step 2

Cook noodles. Add cheese to vegetables saving some mozzerella for the top. Layer the vegetable mix and noodles ending with the noodles. Top with cheese.

Step 3

Bake covered at 350 for 20 mins. Serve with tomato-herb sauce
