Texas Onion Toasts

Ingredients
- 20 thin slices of French Bread from baguette loaf
- olive oil
- 2 Tbs margarine or butter
- 2 large red onion, 3-4 cups, halved and thinly sliced
- 1 tsp sugar
- 3 Tbs red wine vinegar
- 1 Tbs honey
- 1 tsp snipped fresh thyme
- 1/4 tsp salt
- 1/8 tsp freshly ground pepper

Method
Step 1
Place bread slices on baking sheet. Broil 4 inches from heat for 1 minute or till toasted. Turn over and broil about 1 minute more. Brush one side of each slice lightly with olive oil. Set aside
Step 2
Melt margarine or butter in a large saucepan. Add onions and cook, covered,over a low heat for 15 mins, stirring occasionally. Remove from heat. Add sugar and increase heat to medium, Cook 5 mins more, stirring occasionally. Stir in vinegar, honey, thyme, salt and pepper.
Step 3
Using a slotted spoon, place about 1 tablespoon onion mixture atop each slice of toasted bread. Garnish with fresh thyme if desired.
