Swiss Vegetable Medley


This can be baked or done in the microwave. I have also used fresh vegetables which I partially cook first. Any mix can work such as green beans, peas, zucchini, water chestnuts, fresh chopped onion plus what they suggest.  This recipe serves 6


  • 1 large bag frozen vegetable medley ( carrots, broccoli, cauliflower)
  • 1 can cream of mushroom soup Soup, cream of mushroom, canned, condensed, commercial
  • 1 cup shredded swiss cheese Cheese, swiss
  • 1/3 cup sour cream Cream, sour, cultured
  • 1 small jar pimento chopped Pimento, canned
  • 1 can french fried onion rings
  • 1/4 tsp each pepper and season salt


Step 1

Combine thawed and drained vegetables, soup, 1/2 cup cheese, sour cream, pimento, and 1/2 can of the onion rings. Pour into casserole. Bake covered for 30 mins at 350F. Remove cover and top with remaining cheese and onion rings. Bake 5 mins longer
