Stable Whipped cream


This recipe work to stop Whipped Cream from weeping.  This recipe serves


  • 2 tbsp cold water Water, municipal
  • 1 tsp gelatine
  • 2 cups whipping (heavy) cream Cream, fluid, heavy whipping
  • 1 tsp vanilla or 1 tbsp. liqueur or rum
  • 1-2 tsp white or brown sugar


Step 1

Soak gelatine for 5 minutes. Dissolve over hot water then cool. Using an electric mixer, beat cream in a large CHILLED bowl. Just before it becomes soft and billowy, slowly add sugar and flavouring to whipped cream at the sides of bowl. Continue to whip as you do. Whip cream until barely stiff. Add melted and cooled gelatine all at once to the cream during whipping. stop whipping cream when it forms soft peaks. Finish beating with a whisk to adjust the consistency. Serve or Cover and refrigerate.
