Smoked Salmon Roulades

This unusual way of serving the standard smoked salmon will definitely draw comments
Ingredients
- 1 cup+2 tbsp pumpernickel bread crumbs
- 1/4 cup red onion, finely chopped
- 3 Tbs italian parsley, fresh chopped
- 1 Tbs fresh lime juice
- 1 1/2 Tbs olive oil
- 1 tsp fresh ginger, minced peeled
- 1/4 tsp unsweetened cocoa powder
- 16 thin slices smoked salmon about 5in long and 2 1/4 in wide (9oz)
- fresh lime twists
Method
Step 1
Mix first 7 ingredients in medium bowl to blend. Arrange salmon slices on work surface. Place 1 packed tablespoon filling at short end of the salmon slice. Roll up each salmon slice to enclose the filling. Cut each roll crosswise in half. Place cut side up on platter. Sprinkle with cocoa powder. Cover and refrigerate until ready to use or up to 8 hours.
Step 2
Garnish roulades with lime twist and serve
