Smoked Salmon Canapes

A combination of different flavours add up to a great final mouthful

Ingredients

  • 6 slices smoked salmon
  • 1/4 cup cream
  • 1 4oz package cream cheese
  • 1 Tbs water
  • 1 Tbs white vinegar
  • 1 tsp sugar
  • 1/2 tsp dry mustard
  • salt and pepper
  • 1 Tbs grated parmesan cheese

Method

Step 1

Combine water, vinegar, mustard, sugar and salt and pepper in a small saucepan, mix well. Place pan over moderate heat, bring to boil, reduce heat and simmer about 3 minutes uncovered, until one teaspoon of mixture remains in saucepan. Cool.

Step 2

Chop salmon finely, beat softened cream cheese until smooth, combine cream cheese with lightly beaten cream, add reduced mustard mixture, smoked salmon,and cheese; season with pepper, mix well.

Step 3

Spread rounds or squares of thin toast generously with the salmon mixture.
