Smoked Ham Breakfast Casserole

Ingredients

  • 2 cups small broccoli florets
  • 10 green onions, chopped Onions, green, spring or scallions (includes tops and bulb), raw
  • 1/2 lb ham, cut into 1" cubes Turkey ham, cured turkey thigh meat
  • 2 cups grated Monterey jack cheese Cheese, monterey
  • 8 oz cream cheese, cubed, 1/4 in. piece
  • 8 large whole eggs Egg, whole, raw, fresh
  • 2 cups whole milk Milk, fluid, 3.25% milkfat
  • 1 cup Bisquick® baking mix
  • 1/4 tsp salt Salt, table
  • 1/4 tsp ground black pepper Spices, pepper, black

Method

Step 1

Butter 13x9 baking dish. Arrange broccoli and half of green onions evenly over bottom of dish. Sprinkle with ham, Monterey jack cheese, cream cheese, and remaining half of green onions. (Can be prepared 1 day ahead, cover and refrigerate).Preheat oven to 375. Mix eggs, milk, baking mix, salt and pepper in blender until smooth. Pour batter over ham mixture. Bake casserole until just set in center, about 30 minutes. Let cool 10 minutes before serving.
