Seared prosciutto wrapped asparagus

Serve as a starter or a pick up and it will surely please!
Ingredients
- ½ cup balsamic vinegar
- 36 thick spears asparagus, trimmed
- 18 slices prosciutto
- 3 tbsp butter
- salt
Method
Step 1
Put vinegar into a small heavy bottomed saucepan and simmer over medium heat until reduced by about two thirds and slightly syrupy, 8-10 mins. Remove from heat and set aside to let cool. Meanwhile steam asparagus until just tender, about 4 mins. Set asparagus aside to cool. Lay 1 slice of prosciutto on a flat surface and then lay 2 spears atop and roll and then set aside. Repeat with the other prosciutto and asparagus Working in 3 batches, melt 1 tbsp butter in a large cast-iron or heavy bottom skillet over medium heat. Add 6 bundles, judiciously season with salt and pepper and cook until browned on each side about 45 seconds per side. Transfer to a warm plate Repeat until all bundles are browned. Drizzle some of the vinegar syrup on each on plates or over top of each bundles.
