This a starter everyone will talk about!
Ingredients
- 8 oz prawns /large shrimps
- 6 oz scallops
- 2 cups water
- 12 chives
- 1 Tbs cream
- 1 clove garlic
- salt and pepper
- 12 sheets phyllo pastry
- LEMON SAUCE
- 2 Tbs lemon juice
- 1/3 cup cream
- 2 egg yolks
- 1 oz butter
- 1 Tbs chopped chives
- salt and pepper
Method
Step 1
Shell prawns, remove dark veins, wash and pat dry. Remove dark veins from scallops. Wash and pat dry. Bring the water to boil, add prawns and scallops, cook 30 seconds, remove from pan, Strain stock, reserve 1/3 cup for sauce. Combine prawns and scallops with cream, crushed garlic , salt and pepper, mix well. Divide the mixture into 6 portions.
Step 2
Brush a sheet of phyllo pastry lightly with melted butter; top with another sheet of phyllo, brush with butter, fold in half crossways; brush with butter. Place one portion the prawn mixture in centre at one end of pastry; gently roll up. Gather ends to enclose filling. Tie chives around gathers to secure both ends. Place on greased oven tray, brush with butter. Repeat with remaining pastry and prawn mixture. Bake in moderately hot oven 8 to 10 minutes until golden brown. Serve immediately with Lemon Sauce.
Step 3
LEMON SAUCE:Combine reserved 1/3 cup of stock, lemon juice, cream and egg yolks in pan. Stir over heat until warm, but do not boil. Gradually stir in soft butter. Stir constantly until mixture thickens without boiling. Add chives and season with salt and pepper.
