- 3 cups cubed baguette
- ½ cup Parmesan Cheese, grated Cheese, parmesan, grated
- SOUP Soup, chicken broth, canned, prepared with equal volume water, commercial

- 1 LB link Italian sausages, sliced, into 1"thick pieces Sausage, Italian, sweet, links
- 2 cups diced onions Onions, raw
- 1 Tbs garlic minced Garlic, raw
- 2 tsp dried Italian seasoning Spices, Italian seasoning
- ½ tsp kosher salt Salt, kosher
- ½ tsp red pepper flakes Spices, pepper, red, flakes
- ½ cup dry white wine Alcoholic beverage, wine, table, white
- 4 cups chicken broth Soup, chicken broth, canned, prepared with equal volume water, commercial
- 2 cups tomatoes, seeded, diced Tomatoes, red, ripe, raw, year round average
- ½ cup dry orzo pasta Pasta, orzo
- 3 cups fresh spinach, chopped Spinach, raw

Method
Step 1
Toast baguette cubes in olive oil in saute pan over medium heat until crisp. Off the heat, toss with Parmesan cheese; set aside. Saute sausage in oil in a large pot over medium - high heat until browned. Add onion, garlic and seasoning; cook 3-4 minutes or until onion is soft. Deglaze with the wine and reduce until almost evaporated. Add broth. tomatoes, and orzo; bring to a boil, reduce heat, and simmer about 10 minutes, or until the pasta is cooked. Stir in spinach until wilted. Serve topped with croutons on top.
