Sausage Balls In Cheese Pastry

Ingredients
- MEATBALLS
- 1 lb hot or mild pork sausage
- 3/4 cup dry bread crumbs
- 1/3 cup chicken broth
- 1/8 tsp ground nutmeg
- 1/4 tsp poultry seasoning
- CHEESE PASTRY
- 1 1/2 cups all-purpose flour
- 1/4 tsp salt
- 1 tsp paprika
- 1/2 lb cheddar cheese, shredded
- 1/2 cup butter, softened
Method
Step 1
For Meatballs: Combine all ingredients. Form about a teaspoonful of mixture into small balls. Fry slowly in a dry skillet until done. drain on paper towels. (if you fry these at low heat a hard crust should not form).
Step 2
For Pastry: Sift flour, salt, and paprika into a large bowl. Stir in sharp cheddar cheese. Cut in 1/2 cup soft butter or margarine, then work with hands until you have a smooth dough.
Step 3
Pinch off small pieces of dough (about 1 tablespoon) and form smoothly around sausage ball. The balls may be baked at 375F for about 15 to 20 minutes at this point, or place unbaked in freezer until ready to use.
Step 4
To serve, bake unthawed balls at 400F for about 20 to 25 minutes.
