Rum Cherry Nut Cake


Deliciously moist rum cake with decorative color for the holidays  This recipe serves 10


  • 1 package Yellow cake mix with pudding
  • 1 package Vanilla instant pudding mix sm. box
  • 1/2 cup melted margarine Margarine, regular, hard, corn (hydrogenated and regular)
  • 1/2 cup chopped marachino cherries
  • 1/2 cup chopped pecans Nuts, pecans
  • 1/2 cup packed brown sugar Sugars, brown
  • 4 eggs Egg, whole, raw, fresh
  • 3/4 cup vegetable oil Vegetable oil, canola
  • 1/3 cup rum Alcoholic beverage, distilled, all (gin, rum, vodka, whiskey) 80 proof
  • 1/3 cup water Water, municipal
  • 1 cup confectioner's sugar
  • Rum to mix with sugar


Step 1

Spray bundt pan with Pam or similar spray. Mix well cake mix, pudding mix, oil, eggs, rum and water. Melt butter and pour into pan. Sprinkle cherries, nuts, brown sugar into pan. Pour batter over mixture.

Step 2

Bake at 325 deg for 45-60 minutes

Step 3

Glaze with confecitoner's sugar and rum mixture mixed to a thin paste.
