Ricotta-Stuffed Bacon -Wrapped Dates

Ingredients
- 1 lb bacon,(12-13 slices) preferably thick- cut
- 25 Meddjool dates ( about 3/4 lb)
- 1/3 cup ricotta cheese
- Toothpicks and skewer to remove pits
Method
Step 1
Preheat oven 450F. Cut the bacon in half lengthwise to make twice as many slices. Set aside. To remove the pits, cut the ends from the dates and insert blunt end of skewer until it pushes out the pit. Repeat with remaining dates. Place the ricotta in the bottom of a strong plastic bag and seal lightly. Cut a small hole in the tip of one of the corners. Use the bag like a piping bag to fill the dates with cheese. Wrap the ricotta filled dates with a slice of bacon and secure with a toothpick through the centre. Arrange on a parchment lined baking sheet, allowing at least a little space between to allow browning. Bake 15-20 minutes or until bacon is brown and crispy. Remove from sheet and gently remove toothpicks. Serve immediately
