Prawns, Wrapped in Prosciutto

These marinated Jumbo Prawns, Wrapped in Prosciutto with a rosemary sprig and a sliver of mango proved to be a deadly combination during the Seven Deadly Sins Dinner Party.  The recipe was adapted from one that used bacon. Although shrimp and bacon have a natural affinity for each other, they need different cooking times.  By using prosciutto instead of bacon, which is thinner, that problem is eliminated.

Ingredients

  • 14 jumbo shrimp (headless, tail on)
  • ¼ cup olive oil
  • 2 tbsp. lemon juice
  • 1 tsp. lemon zest
  • 1 clove minced garlic
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 tbsp. chopped fresh rosemary
  • 14 pieces prosciutto
  • 7 rosemary spears
  • 7 slices of mango

Method

Step 1

Rinse shrimp and pat dry and transfer to bowl.

Step 2

Marinade; Combine olive oil, lemon juice, lemon zest, garlic, salt, pepper and rosemary. Shake and pour over shrimp. Let sit for at least an hour, preferably overnight.

Step 3

Drain shrimp, wrap each in a piece of prosciutto. Secure each with a toothpick. Grill for 4 minutes on each side, turning once. Serve with rosemary spear and mango slice.
