Pesto Dip With Crisp Garlic Wedges

Bold homemade Pesto

Ingredients

  • 1 cup chopped fresh basil
  • 1 clove garlic, crushed
  • 2 Tbs pine nuts, toasted
  • 2 Tbs grated fresh Parmesan cheese
  • 2 Tbs olive oil
  • 2 tsp lemon juice
  • 300 g sour cream
  • CRISP GARLIC WEDGES
  • 4 rounds pita bread
  • 150 g butter, melted
  • 2 cloves garlic, crushed
  • 2/3 cup grated fresh Parmesan cheese

Method

Step 1

Blend or process basil, garlic, nuts, cheese, oil, and juice until smooth. Combine in bowl with sour cream. Serve with crisp garlic wedges.

Step 2

CRISP GARLIC WEDGES:Split bread rounds in half; cut into large wedges, place slit side up on oven trays. Brush with combined butter and garlic, sprinkle with cheese. Bake in moderately hot oven for about 3 minutes or until lightly browned and crisp.
