Five filling choices or invent a new one


  • 2 sheets ready-rolled puff pastry per filling choice
  • 1 cup cold mashed kumara (sweet potato)
  • 1 clove garlic, crushed
  • 2 Tbs melted butter
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 2 Tbs chopped fresh basil
  • 3 rashers bacon, finely chopped
  • 125 g frozen chopped spinach, thawed
  • 200 g feta cheese, finely crumbled
  • 1/4 tsp ground nutmeg
  • 1/3 cup crunchy peanut butter
  • 1/3 cup ground almonds
  • 1/4 cup chopped fresh coriander leaves
  • 1 1/2 Tbs mild curry paste
  • 100 gram package cream cheese, softened
  • 2 Tbs finely chopped fresh rosemary
  • 1/4 cup olive paste
  • 1 large red pepper
  • 1/3 cup canned refried beans
  • 1/2 cup stale breadcrumbs
  • 130 gram can corn kernels, drained
  • 2 Tbs grated tasty cheddar cheese
  • 1/4 cup chopped fresh coriander leaves


Step 1

You need 2 sheets of ready-rolled puff pastry for each of the 5 recipes. Spread half of each filling on 1 sheet of pastry ; use the same method for each filling. Roll pastry into 10 x 15 rectangle. Spread with filling. Starting at one long side ,fold to the centre. Now repeat the procedure and then fold in half and press slightly together over the other side to form a After filling mixture is spread on sheet of pastry fold in sides to meet in the centre,flatten slightly, fold in half again, press sides together. Cover and refrigerate 1 hour. Cut pastry into 1.5 cm slices ; place cut side up, on lightly greased oven trays. Bake in moderately hot oven for about 15 minutes.

Step 2

KUMARA, SUN-DRIED TOMATO AND BASIL:you need to cook about 400g kumara for this recipe.Combine all ingredients in bowl, mix well.

Step 3

SPINACH AND FETA:Add bacon to pan, cook, stirring, until browned ; drain. Squeeze moisture from spinach. Combine all ingredients in bowl ; mix well.

Step 4

PEANUT CORIANDER:Combine all ingredients in bowl ; mix well.

Step 5

CHEESE, OLIVE AND ROSEMARY:Combine cheese and rosemary in bowl ; spread over half of each pastry sheet. Spread olive paste over other half of each pastry sheet.

Step 6

MEXICAN-STYLE:Quarter pepper, remove seeds and membranes. Grill pepper, skin side up until skin blisters and blackens. Peel away skin, chop pepper finely. Combine all ingredients in bowl ; mix well.
